The big ol’ pile of slop in the picture above is a leftover Enchilada that I heated up in a frying pan (hence the falling apart / very not enchilada shape of it!)
I COULD HAVE EATEN ANOTHER PLATE OF IT TOO.

Strap yourself in whilst I list off the ingredients at you. Here goes –
courgette, onion, many garlic, sweetcorn, peas, broccoli, cauliflower, gravy granules, brown sauce, black pepper, salt, garlic granules, chopped tomatoes, smoked paprika, chilli powder, chilli flakes, balsamic vinegar and I think that was it… (If I’d have had some Hendersons relish / tomato paste in stock I’d have thrown that in too!)
Served with a side of cabbage so spicy my Mum had to make herself her own batch and some baked beans
