REFRIED BEANS

These beans have a subtle heat, they’re creamy and they were the perfect accompaniment to some crispy tofu & veggies.

INGREDIENTS

1 tin black eye beans

1/2 red bell pepper, chopped

Pinch of Salt

1/2 teaspoon pepper

1 teaspoon siracha

1/2 teaspoon chilli flakes

1 teaspoon chipotle paste

The juice of 1/2 a lime

DIRECTIONS

Add everything to a small saucepan with a little oil and fry for a few mins

Add the lime, siracha & chipotle and fry for a couple more minutes until the beans have softened to the point of being mash

SERVING SUGGESTION

We had ours with crispy tofu, rice, avocado, sweetcorn, tomatoes & spring onion but this would also be great in tacos or a quesadilla
