SIMPLE MEXICAN FLAVOURED BUDDHA BOWL

For this incredibly simple, delicious and nourishing dish you will need:

1 block of silken tofu, cut into cubes, fried in veg oil and spiced with ground cumin, salt, pepper & sugar

1 tin of black beans, fried in a little oil, a sprinkle of chilli flakes and pepper, with a big dollop of chipotle paste (use a small saucepan rather than a frying pan so the beans can all mush up together during cooking)

Assemble on top of a bed of rice with chopped tomatoes, lettuce, sweetcorn, spring onion, avocado and a wedge of lime
