I think this might just be my first Avocado Toast in at least a year. What kind of Vegan Blogger am I!? Maybe don’t answer that.
Tom is away this weekend so I didn’t fancy making a big Brunch today. Started scrolling through Instagram after eating this and it was like Brunch, Brunch, Brunch and I felt so much regret! I have a feeling there’ll be a big Brunch in my not too distant future!
My Sister popped round for the afternoon to hang out, walk the dog with me and chat about how we can improve our zero waste efforts (more on this soon).
We scoffed a load of Roast Potatoes and Roasted Courgettes (from Tom’s parents’ garden) with an enormous amount of Hummus n Hot Sauce.
I am utterly obsessed with Tofu right now. I had it for lunch the last two days in a row as well (I’m perfecting my Salt & Chilli Tofu Recipe before sharing it on the blog).
Tonight I was feeling super lazy, so I went as basic as possible (almost). Takeaway style Crispy Tofu, Sweet & Sour Sauce (recipe here) and White Basmati Rice.
