Another What I Ate In A Day, Saturday Edition. After eating the brunch we had planned on having this morning for dinner the night before (I <3 brunch for dinner), we had the meal I was planning on making last night for lunch (didn’t make this in time to be classed as brunch, soz).

Sweet Potato & Chickpea Pakoras – store bought “Great Food” brand 

Salad – Cucumber, Tomato, Red Onion, dressed with 1/8 teaspoon Himalayan salt, 1/8 teaspoon brown sugar, 1/2 teaspoon black pepper, juice of 1/4 of a lemon, tiny bit of vinegar – stir up and serve

White Rice – oh man I love white rice

Courgettes – fried in coconut oil, spiced with Turmeric, Chilli Powder, Garlic Powder/Granules, 1 teaspoon of brown sugar. They are spicy and sweet and sticky and depending on how thinly you slice them they can crisp up around the edges

Dhal – Red Lentils spiced with turmeric and curry powder, topped with fried red onions and (a lot of) garlic

Toasted Cashews – toasted in a frying pan and blitzed in the food processor and sprinkled on top



Before I went Vegan I used to bake all the time (I could make a red velvet better than the Hummingbird Bakery, just sayin’), but this is the first time I have baked as a Vegan! If I’d have known it was going to be this easy I’d have started a long time ago!

My friend’s birthday is coming up at the end of the month and I’m planning on making her a cake so I wanted to get some practice in ahead of the big day. I purchased some new baking equipment at the beginning of the week and from the moment I woke up on Saturday Morning I was dreaming about cake.

I did some research to get the gist of how to make a Vegan cake and I came up with my own recipe (I am in the Baking Is Not Actually An Exact Science Camp and you can just make it up as you go) and this was the result. I think it looks great despite not cleaning up the plate I drizzled the chocolate glaze and sugar strands on before taking a pic. I’ll share the recipe soon, I promise.



Pimms! Adding this to my What I Ate because I can and I will. It’s been a long while since I last had Pimms, I think even as long ago as the summer before last. I am a terrible Brit. TWENTY POUNDS for the bottle!! What an absolute rip off tbh.

My favourite way to have Pimms is with strawberries and mint and lashings of ice – what’s yours?



Dinner courtesy of hubs (yes, hubs. Don’t @ me) was one of his specials – tofish, chips and mushy peas. Eaten at the coffee table whilst watching Dirty Rotten Scoundrels. A bloody good Saturday night.
