Hey there, What I Ate In A Day Fans! I watched a whole heap of What I Ate YouTube videos last night and realised it’s been a while since my last one. I love seeing what other people eat, especially Raw Vegans as it’s so different to my own diet; I think it’s quite common to be fascinated by other people’s diets that are different to your own – they inspire me to eat a bunch of watermelon and hopefully an omnivore reading this will feel inspired to eat a little less meat/cheese/eggs.

We kicked off the day with a big ol’ plate of brunch, it being a Sunday it would have been darn rude not to. One needs a lot of fuel for a Gilmore Girls marathon ya know. We had hash browns, baked beans, sautéed spinach, fried mushrooms n fried tomatoes. Washed down with about a gallon of iced water.


For dinner I made basmati rice, leftover sloppy joe mix, black beans and sauce, with my favourite simple salad of cos lettuce, tomato and red onion.

SLOPPY JOE MIX makes 6 small burgers – 4 of which we ate last night

1 tin of black beans (kidney beans also work well)

1 sautéed white onion (Fry in a little sugar to caramelise it)

~ add to a food processor to combine, then add to a large bowl and combine with

1 bag of Vegan mince (I used Linda McCartney) – if frozen, thaw it out a bit first

1 teaspoon cumin, chilli powder

20g of flour

~ combine together and form into patties. Add to a frying pan on a medium heat with the oil of your choice for 3-4 minutes per side. Then baste with a mixture of

5 parts BBQ Sauce, 1 part Tomato Sauce, 2 parts Siracha Hot Sauce

~ fry each basted side for a couple of minutes each. The burgers will fall apart somewhat during cooking, you’re looking for the consistency of a sloppy joe so don’t panic, they stick together very well once slopped into the burger bun and they are delicious as a mulchy component to a burrito bowl ?

1 tin of black beans (would also work with kidney or pinto beans)

6-10 Jalapeno slices + a splash of the liquid from the jar

Juice of 1/2 a lemon

1/4 teaspoon paprika

Pinch of salt and a sprinkle of pepper

~ heat in a small saucepan over a medium heat for 5 minutes, then roughly mash


1 small green bell pepper, sautéed

2-3 tablespoons of hummus

Juice of 1/2 a lime

1/4 of a red onion

A pinch of salt and sprinkle of pepper

1 teaspoon Siracha Hot Sauce

1/4 teaspoon paprika

1/4 teaspoon cumin

1 teaspoon Vegan mayo

Splash of water

~ whizz it all up in a food processor
