My absolute favourite YouTube videos / blog posts / Instagram photos are What’s in my Fridge/Cupboard, Food Hauls and What I Ate in a Day’s so I thought I would give it a go myself.
I picked today to start purely because I knew I’d be having breakfast; it’s not a meal I have every day because I’m really not a morning person. I pretty much think of breakfast as giving up on the idea of going back to bed and I always like to keep that flicker of hope alive that I can clamber back inside the covers and nap the day away.
Today also happened to be one of those big-appetite-want-to-eat-everything kind of days.
BREAKFAST (top image)
Tofu scramble and a Linda McCartney sausage left over from the night before’s dinner and covered in siracha.
A portion of the bean chilli I made at the beginning of the week with a sprinkling of chopped fresh tomatoes/spring onions and some makeshift tortilla chips for when you’re on a budget aka crushed up hula hoops
Soft shell tacos stuffed with refried pinto beans, red pepper and a little leftover chilli. Pink pickled onions, avocado, tomatoes, sweetcorn and rice
*shuffles papers* *turns to camera*
It’s been a good food day.
