WHAT I ATE IN A WEEKEND #8

Hey, Pals! Oh boy am I berating myself for not taking these pictures on my camera. Sometimes it’s just such a faff to get my camera out and iPhone pics always look fine enough on my phone but when I transfer them to hear I’m like gross. But I just love What I Ate In A Day posts and I really hope they give you some ideas of what you could have for dinner or something new to try etc. so here we are! Let’s deal. We can get through it together.

FRIDAY

Last Friday I made this humungous Burrito Bowl featuring white rice cooked in turmeric, black beans cooked in garlic butter (I know), half a Fry’s Family chikn schnitzel smothered in Violife pizza cheese, sweetcorn, courgette, gem lettuce, avocado, tomato and tofu bacon crumbles. I didn’t manage to finish it, but my god did I try my best. TOFU BACON CRUMBLES ON EVERYTHING, PLEASE!

Beans on Toast! Beans on Toast! Beans on Toast! The comfiest of all comfort foods!

Jus Rol Pain au Chocolat’s are accidentally vegan and they are heavenly. You get 6 in a pack and if you can manage 3 we can be friends.

Potato skins were always one of my favourite things to eat before I went Vegan.

They’re basically an entire meal by themselves that’s disguised as a side dish, an appetiser or a snack! What’s not to love!?

We had ours with Garlicky Sour Cream, Tofu Bacon Crumbles and a side of Jalapeno Poppers.

GARLICKY SOUR CREAM

INGREDIENTS

1 cup soaked cashews

1/2 cup non dairy milk

Juice of 1/2 a lemon

Salt & Pepper

1 teaspoon vinegar

4 cloves of crushed garlic, gently sautéed in a tablespoon of butter

DIRECTIONS

Blend till very smooth. Taste, add more flavour if necessary. If too thick, add a little more non dairy milk and keep blending.

JALAPENO POPPERS

INGREDIENTS

Jalapeno peppers

Violife Pizza Cheese (also v nice stuffed with cashew cheese)

Breadcrumbs

Non Dairy Milk

Flour

DIRECTIONS

Shell out the jalapenos of all their seeds.

Stuff the Jalapeno with the cheese.

Dip into the flour, then milk, then flour again, then breadcrumbs.

Fry till golden.

Baby’s first Club Mexicana!

My Sister came over on Sunday with her hubs and her kids and we descended on Camden Market en masse and headed straight for Club Mexicana.

Leo (5) had nachos and loved them.

I had 3 Tofish Tacos and so did my Sister (who had my other nephew strapped to her front in a Baby Bjorn and being the excellent parent that she is, she put a napkin on his head so she wouldn’t spill any chimichurri on his wee baby head – yes I have a picture of that and no, she won’t let me post it anywhere). The #ladsladssalads had a Jackfruit Burrito each.

Later that evening me and Tom had home made nachos for dinner. Much less Instagrammable than Club Mexicana’s offering from earlier in the day, but just as delicious.

Featuring Linda McCartney sausages, beans, guacamole, Violife pizza cheese, mayo and hot sauce. Not gourmet but so so good.
